Waterford Estate
How to Say It
A Helderberg-area Stellenbosch flagship in the Blaauwklippen Valley, crafting age-worthy Bordeaux-style blends from ancient granite soils with regenerative farming at its core.
Waterford Estate was founded on 1 April 1998 when technology entrepreneur Jeremy 'Jem' Ord partnered with veteran Stellenbosch winemaker Kevin Arnold to acquire former Stellenrust land in the Blaauwklippen Valley, on the western slopes of Helderberg Mountain. The estate covers 120 hectares with 50 hectares of vines across 15 varieties and is anchored by two flagships: the Kevin Arnold Shiraz, the estate's signature single-variety wine, and The Jem, a multi-variety Bordeaux-style blend named for the owner, first released in 2006 from the 2004 vintage. Tim Atkin MW designated Waterford a South African 'first growth' in 2019. The Jem has earned 97 points from Atkin, a 5-star Platter's rating, and a place in the top 1% of all wines on Vivino.

Location and Terroir
Waterford Estate sits in the Blaauwklippen Valley on the western slopes of Helderberg Mountain, one of Stellenbosch's most distinctive sub-areas. The Helderberg is not an officially demarcated Wine of Origin ward, but it is widely recognised in industry conversation for the maritime influence it draws from False Bay and the structural Cabernet and Shiraz it produces. The 120-hectare property is built on soils of ancient granite, shale, sandstone, decomposed granite, and red Hutton clay, the product of hundreds of millions of years of geological evolution. North-facing slopes capture warmth while cooling bay breezes provide consistent moderation, creating the balance that defines the estate's structured, terroir-driven style.

History and Founding
Jeremy 'Jem' Ord, a South African technology entrepreneur, and Kevin Arnold, a winemaker with three decades at Delheim and Rust en Vrede and the first South African invited to work at Robert Mondavi in California, established Waterford on 1 April 1998 on land that had previously formed part of the Stellenrust property. The winery officially opened in April 2000 under the name Waterford Winery before being renamed Waterford Estate following the granting of Estate status. Kevin Arnold led winemaking from the outset and remains Cellar Master and Managing Partner; Mark le Roux holds the day-to-day Cellar Master role today. The estate's flagship blend, The Jem, was introduced in 2006 with the 2004 vintage at a launch price that signalled Waterford's intent to redefine perceptions of South African fine wine. In January 2004, the Kevin Arnold Shiraz 2001 was served at Oprah Winfrey's 50th birthday celebration.

Varieties and Winemaking
Waterford grows an exceptionally diverse range of varieties across its 50 planted hectares, spanning Bordeaux staples, Rhône varieties, Italian grapes, and Iberian cultivars. Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, and Malbec form the Bordeaux backbone, while Shiraz, Grenache, and Mourvèdre represent the Rhône. Sangiovese, Barbera, and Tempranillo bring Italian and Spanish character to the portfolio. The sole white variety on the main estate is Chardonnay, with vines planted in 1988, while Heritage Chenin Blanc vines from 1966 contribute to the white wine range. The winemaking philosophy centres on minimal intervention and terroir expression, producing structured, age-worthy wines.

Tim Atkin MW classified Waterford Estate as a 'first growth' within South Africa in 2019, placing it among the country's most distinguished producers. The estate has also been included among the world's top 100 vineyards. The Kevin Arnold Shiraz, the estate's signature single-variety wine named in honour of its founding winemaker, has been a flagship from the outset; recent releases have leaned into a Rhône-inspired profile blended with small components of Grenache and Mourvèdre and aged in French oak. The Jem, the multi-variety flagship blend named for owner Jeremy 'Jem' Ord, has received 97 points from Tim Atkin MW, a 5-star Platter's rating, and ranks in the top 1% of wines on Vivino. The blend is built around a Cabernet Sauvignon backbone supported by Shiraz and a rotating cast of Bordeaux varieties along with smaller percentages of Italian and Rhône cultivars, with the precise composition varying vintage to vintage. The Library Collection groups limited-release back-vintages, mature single-variety bottlings, and the estate's archive of historical releases.

Sustainability and Experiences
Regenerative farming practices underpin operations at Waterford, including the use of Dexter cattle for natural soil management and a water capture and recycling system designed to support sustainable viticulture. Beyond wine production, the estate offers a range of visitor experiences: a Wine Drive Safari, a Porcupine Trail Wine Walk, and the SALT restaurant for gourmet dining. The Wine and Chocolate pairing experience, created in partnership with chocolatier Richard von Geusau in 2006, was the first of its kind in South Africa. The estate's Mediterranean and Cape-Tuscan architectural design, with bell tower, courtyards, and natural stone walls, provides the backdrop for all of these activities and contributes to the estate's strong reputation in wine tourism circles.

Waterford's red wines are structured and age-worthy, with The Jem and the Estate Cabernet Sauvignon showing dark fruit, cedar, and graphite character drawn from ancient granite and Hutton clay soils. The Jem delivers complexity and concentration with fine-grained tannins built on a Cabernet Sauvignon spine and a Shiraz-led mid-palate. The Kevin Arnold Shiraz, the estate's signature single-variety wine, shows the savoury, spice-driven profile typical of Helderberg sites with violet, black pepper, and dark berry. Estate Chardonnay and Heritage Chenin Blanc offer texture, citrus drive, and orchard-fruit weight shaped by ocean-cooled growing conditions and old-vine concentration.
